It seems like everybody is sick this Spring. People are dropping like flies! Whether it’s coughs and colds, sinus infections, or the flu, it’s remarkable how long this cold rainy season has lasted in our neck of the woods and how ill it’s made people. So often when you’re sick, you don’t want to eat much (or you simply can’t keep much down!), so you reach for a tin of store-bought soup and some crackers.

But next time you or your family are feeling under the weather, whip up this Instant Pot Healing Chicken Soup, full of hearty ingredients and anti-inflammatory turmeric, sickness-fighting fresh garlic, and nutrient-dense bone broth. It doesn’t require much effort and it’ll be the perfect thing to sip on on your road to recovery. Plus, as an added bonus, it’s Whole30 compliant!

You start by adding the broth, chicken, and seasonings to the pot. We’ve called for chicken bone broth, but in a pinch, you can just use plain chicken broth. However, bone broth has a long list of healing and health benefits, so we highly suggest using it, especially if you’re making this because you’re feeling sick! Alternatively, use chicken broth and add a couple of tablespoons of high-quality grass-fed gelatin, which you can purchase at most health and specialty grocery stores. You can purchase frozen bone broth at some grocery stores or make your own using our Easy 90-Minute Instant Pot Bone Broth. Just choose chicken bones or leftover chicken carcasses as your type of bones.

Lid the pot and cook the chicken on Manual/Pressure Cook HIGH for 8 minutes. Allow for a 3-minute natural release to keep the chicken from getting chewy and then remove it to cut or shred! Once it’s chopped, return it to the pot.

Dump the potatoes, celery, and carrots in after the chicken and re-lid the pot, set to sealing, and cook on Manual/Pressure HIGH for 0 minutes. Yes, you read that correctly! Setting the pot to 0 minutes means it will take the time required to come back to pressure, but then will beep to tell you the cook time is up. It’s perfect for this soup and softens the vegetables without making them mushy.

Once the final cook time has elapsed, quick release the pressure and serve up the soup! Store any leftovers in a glass container or jar in the fridge for up to a week. Avoid plastic if you can, as the turmeric will stain Tupperware past the point of no return! What are you waiting for? Whip up this soup and get back to bed, sickie!

  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, diced
  • 4 small white or sweet potatoes, chopped into ½ inch cubes
  • 1 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • 2 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp pepper
  • 6 cups chicken bone broth
  • 1.5 lb boneless skinless chicken breasts or thighs, chopped into 1" pieces

Method

  • Add broth, chicken, turmeric, Italian seasoning, garlic, onion, salt, and pepper to the Instant Pot.
  • Lid the pot, set the valve to sealing, and cook on Manual/Pressure Cook HIGH for 8 minutes. Once cook time has elapsed, allow for a 3-minute natural release to keep the chicken tender.
  • Remove lid and add all remaining ingredients to the pot. Lid the pot, set the valve to sealing, and cook on Manual/Pressure Cook HIGH for 0 minutes. Once cook time has elapsed, quick release the pressure.
  • Remove lid and serve hot! Leftovers can be stored in an airtight container in the fridge for up to 5 days.
